Well look no further. Why not give the one you love Squisito gift vouchers this Christmas. The present that keeps on giving. Present the e-voucher to your foodie friend and all they have to do is book a convenient date and topic. Choose from Artisan courses ranging from sausage making, curing and smoking, pasta, gelato and bread making. Some thoughts from pupils “Alex, you are a natural teacher – full of passion that you want to pass onto others – with a real love of what you do. We’ve had such a good day starting with a cracking breakfast and you took us at our own pace. Well done to you both. We’ve had a hands-on day and will head South full of enthusiasm with some new skills to apply. Until next time . . . ” Nick (November 2011)

“Days like this don’t come around often – delicacies appearing throughout the day . . . porc tartare – mindblowing brie – local beers – arancello. We’ve tried a few tastings these last few years and the day we were making sausages turned out the best of all. Alex has taught more amusing connotations of sausages than I could ever have thought up and left us with kilos of of the output to take home. Thanks for giving my Pa a great birthday.” Doug. (November 2011)

Or for those with a sense of advernture and lovers of Italian food then Secret Squisito Supper Club Gift Vouchers are perfect. See www.squisito-deli.co.uk for more info on specific courses and to purchase vouchers in our shop. What could be easier? Some thoughts from Secret Squisito Supper Clubbers
“The best supper club food I’ve had in a long time” Ms Marmite
“Such a joy to eat fabulous local food, cleverly cooked with a love and knowledge of the good things in life” Fran
“What a fun and tasty evening – you guys set the standard” Tasha

For last minute shopping we are will be bringing our sausages, pork shoulder mince for stuffing, fresh herbs, spices, mostarda, coffee, flour, meatballs, pesto, pasta, salami, taralli, olives, bread, crespelle, salt beef, pork and Chianti terrine, crabapple and chilli relish, limoncello jam, smoked garlic, Rayburn roasted ham with mostarda glaze and cloves and last but not least the wonderful lambos (which go fast, pardon the pun), to Moseley Farmers Market, Birmingham this Saturday, Christmas Eve from 9-1. It will be busy so if you want to avoid the crush just email sara@squisito-deli.co.uk or tweet your order and I will put it by for you.

We will also be selling gift vouchers and our favourite cookery book this year by the wonderful Ms Marmite aka Kerstin Rodgers, The Supper Club cook book – “This book is unique – not only is it incredibly beautiful, full of Kerstin Rodgers’ whimsical style (think French vintage with an edgy, slightly subversive twist), it is also eclectic in terms of recipes. This is because it is based upon The Underground Restaurant – the author’s supperclub which is never allowed to rest on its laurels, but is constantly coming up with interesting themes. The book includes some of these, including a Midnight Feast of black food (Black Russians, Squid-ink Tortelloni, Marmite Chocolate Cupcakes) and Elvis Night (Deep-Fried Peanut Butter & Banana Sandwiches, Blackened Catfish) and the ridiculously pretty Flower Menu (Stuffed Courgette Flowers, Marigold Bread, Elderflower Fritters, ice cream served in a Flower Ice Bowl). Other interesting ideas include making butterscotch schnapps with Daim bars, vodka and your dishwasher, flavouring popcorn with butter, chilli and lime as well as taking lots of things back to first principles – candying citrus peel, for example.

This is a lovely cookery book, full of things I personally would like to try, but it’s also an excellent read, offering as it does a glimpse into what is clearly a fascinating life.”

BUON NATALE!

Ginger Baker’s bread Trio di bruschetta, fritte di Grana Padano, due arrosto delle mandorla

Awesome antipasti selection of roasted almonds 2 ways, bruschetta 3 ways, gorgeous Grana Padano crisps and stunning Puglian olives stuffed with anchovies and chilli

Wine recommendations: Clean the palate and open the stomach with, a frizzante white or rosé. We like Prosecco – Martini Prosecco ASDA £5.00 1/2 price at ASDA Rugby this week and now very good value Sainsbury’s Taste the Difference Prosecco Conegliano DOC from Rugby Sainsbury’s at £6.99 down from £10.49 (also Tesco), Jacob’s Creek Sparkling Rosé NV Morrisons Price: £7.99 ASDA Extra Special Prosecco £7.23, La Gioiosa Pinot Grigio Marca Trevigiana IGT Semi-Sparkling NV (Tesco), Marca Trevigiana, Veneto (Tesco £6.49)

Antipasti
Fonduta di Zucca – Roasted pumpkin served fondue style with a difference!
served with
Rucola con pinoli e melograno – Jewel like pomegranate seeds with Tina’s winter leaves and toasted pine nuts
Wine recommendations: Something that stands up to the cheesey sweetness of the pumpkin so something frizzante like Prosecco as above. Moving on, for a flavour change and to compliment the pumpkin try Villa Malizia Pinot Grigio Ramato Rosé £3. 99 ALDI, Villa Chiara Pinot Grigio Frizzante Rosé – £3. 99 ALDI, Bianco, 2010 Rocca Vecchia Falanghina, Puglia £5.99 Co-Op Rugby, Verdicchio dei Castelli di Jesi 2010 £8.99 from Co-Op Rugby Stella Alpina Pinot Grigio 2008 - £7.99 Majestic, Cantina Beato Pinot Grigo Superiore Breganze 2007 – Majestic £4.99 ea for 2.

Primi
Salsiccia Toscana con Raviolo – Handmade ravioli stuffed with Tuscan sausage topped with sage butter
Wine recommendations: A medium weight Chianti like Piccini Chianti Riserva £6.49 at Tesco Rugby or CoOp Bilton, Cecci’s Chianti Classico from Sainsbury’s Rugby at £7.36 or Vino Nobile Montepulciano Poliziano (not Abruzzo btw) from Majestic £7.99. With the ravioli Piccini Supertuscan (this reads like a Piccini advert!) which is a bit lighter and like a good young claret is excellent and worth laying diown a few bottloes for next Christmas. On a budget or for a 2nd bottle try Aldi’s Tuscan red at £3.99 or la Collezione Rosso £2.99 – best at warm room temperature.

Ravioli with rainbow chard and homemade ricotta
Wine recommendations: A light red or rosé would be appropriate. We like Villa Malizia Pinot Grigio Ramato Rosé £3. 99 ALDI, Villa Chiara Pinot Grigio Frizzante Rosé – £3. 99 ALDI. For light red there is little to beat a cheap plain Valpolicella from a mix of corvina, molinara and rondinella grapes or Bardolino Classico. ASDA scores well underv £4.00 since we have not had a bad Valpolicella from them in recent years so it will be interesting to see what their 2010 is like next year. For something a bit richer try the Ripasso Valpolicella from Rugby M&S or Tesco at just under £6.00 respectively or pay another £3.00 and try Waitrose’s Ripasso Classico (eh??) at £9.99 from Lutterworth. If you win the lottery this week my favourite Valpolicella Classico here is by Allegrini from my favourite vintner Wine in Cornwall at £9.79 for the 2009 which is excellent drinking (but avoid the 2010 if it anything like the bottle we had at Fifteen Cornwall). Tesco Bardolino does the job and is recommended by our Italian loving plumber. £3.98 in Tesco or £5.99 for the excellent Allegrini Bardolino Naiano 2009 from Majestic.

Secondi
Fagiano al Barolo – Denbigh Estate pheasant in Barolo with cavolo nero and polenta
Wine recommendations: a heavy red is the order of the day but that does not mean it has to be heavily oaked like rioja whilst sweeter reds like Primitivo grape goes well with game and polenta or something like Asda’s Extra Special at £6.25 or Sainsbury’s taste the Difference Primitivo di Manduria from Sainsbury’s Rugby at £5.99 or Paolo Leo Primitivo di Manduria, Puglia, Italy 2009 from Waitrose Lutterworth £9.49 which is nice but exxy. Another good choice is Primitivo Torre Saracena from Bablake Wines in Coventry. For something a bit less sweet try Aglianico di Sicilia 2009 Italy from Majestic, £5.49 down from £6.99 for 2. Leave a glass to go with cheese.

Orata ‘al Cartoccio’ with Tuscan herbs – Sea Bream baked in a bag Tuscan style
Wine recommendations: A hard choice here since the meat eaters will be on red so I would buy a bottle of something really nice and IGT (that’s small local producer and variety in Italiano) and hog it to myself. My first choice would be a good Sicilian white like Gavi di Gavi generally avialable, or Frascati Superiore People, Poggio Le Volpi 2009 £8.49 from Wine in Cornwall which is a Cloudy Bay beater at our kind of money. For something slightly off the beaten track I heartily recommend Casada Inzolia from Duncan Murray in Market Harborough or the 2008 Trinacria Bianco, Sicily from Waitrose Lutterworth at the princely sum of £3.99

Dolci
Fichi al Cioccolato con Noce – Figs stuffed and roasted with dark chocolate and hazelnuts
Wine recommendations: conventional logic suggest a sweet wine to pair with dessert so a pantillera or moscato from Sicily usually does the trick. However, we’ll be drinking a chilled glass of Lambrusco Dolce from ASDA at £2.38 or Medici Ermete from Tony Di Maria of AD Maria in Coventry (7.99 but in a different league).

Formaggi
Farmers Market selection with pink peppercorns and Warwickshire honey
Wine recommendations: as above or amaretto or limoncello. See if you can get Sara to unlock her homemade amaretto or limoncello or, better still, get her recipe!

Caffe
Squisito 100% Columbian Arabica coffee
Wine recommendations: grappa or coffee liqueur is my choice with a glass of sparkling mineral water from Lidl 27p/litre

Many thanks to our wonderful producers who this month are Tina in Monks Kirby for pumpkins, hazelnuts, winter salad, herbs, cavolo nero, Barry the Gamekeeper on The Denbigh Estate, Monks Kirby for pheasant, Alex for Tuscan sausages
All my food is made to order and food allergies and foibles are easily catered for, so please just ask
